Strawberry Brownies Recipe

Introduction

Strawberry brownies offer a delightful twist on the traditional chocolate treat, combining the sweetness of strawberry cake mix with a luscious strawberry frosting. This easy recipe yields moist, fruity brownies perfect for spring gatherings or anytime a fresh dessert is desired.

A square pink strawberry cake, cut into sixteen smaller square pieces, lies flat on a white marbled surface. Each cake piece has a light pink frosting layer on top, smooth with small darker pink strawberry bits showing through. The cake underneath the frosting is a slightly darker pink, visible where pieces are cut. Two whole ripe strawberries, one red and one orange-red, with bright green leaves, rest at the top-right corner of the white marbled surface near the cake. photo taken with an iphone --ar 4:5 --v 7

Ingredients

  • 1 box strawberry cake mix with pudding in the mix (We used Pillsbury)
  • 2 large eggs
  • 1/3 cup vegetable or canola oil (80 ml)
  • 1 teaspoon vanilla extract (5 ml)
  • 3/4 cup powdered sugar (90g)
  • 2 tablespoons strawberry preserves (40g, Bonne Maman recommended)
  • 1 ½ tablespoons milk (22 ml)
  • 1 tablespoon cream cheese (15g, optional)

Instructions

  1. Step 1: Preheat your oven to 350°F (175°C). Spray an 8×8 inch pan with nonstick spray or line it with foil or parchment paper for easy removal. Set aside.
  2. Step 2: In a large bowl, combine the strawberry cake mix, eggs, oil, and vanilla extract. Mix until just combined; you can use a spoon or a mixer as preferred.
  3. Step 3: Press the batter evenly into the prepared pan. Bake for 18 to 22 minutes, or until the brownies are just set and a toothpick inserted comes out clean. Allow the brownies to cool completely in the pan.
  4. Step 4: To make the frosting, whisk together the powdered sugar, strawberry preserves, milk, and cream cheese if using, until smooth and spreadable.
  5. Step 5: Spread the frosting evenly over the cooled brownies. Slice and serve once the frosting has set slightly.

Tips & Variations

  • Use high-quality strawberry preserves for the best flavor in the frosting.
  • For a dairy-free option, omit the cream cheese and increase milk slightly for desired consistency.
  • You can add fresh chopped strawberries on top for extra fruitiness and texture.
  • Line the pan with parchment paper extending beyond edges to lift brownies easily after baking.

Storage

Store the strawberry brownies in an airtight container in the refrigerator for up to 4 days. Allow them to come to room temperature before serving for the best texture. You can gently warm individual portions in the microwave for 10-15 seconds if desired.

How to Serve

The image shows two pieces of pink frosted bars placed on a white plate with a clear edge design. Each bar has two layers: a thicker, soft, crumbly pink cake layer at the bottom and a smooth, light pink frosting layer on top. The focus is on the close-up of the bars with one bar tilted slightly to show the inside texture. In the corner of the image, there is a fresh red strawberry with green leaves. The background is a white marbled texture. photo taken with an iphone --ar 4:5 --v 7

FAQs

Can I use a different cake mix flavor?

While strawberry cake mix is recommended for the best flavor, you can experiment with other fruity cake mixes if you prefer a different taste.

Is cream cheese necessary for the frosting?

No, cream cheese is optional. It adds richness and a slight tang but the frosting will still be delicious without it; simply adjust the milk to get the right spreadable consistency.
