Ingredients

Scale

Vegetables

  • 2 cups cherry or grape tomatoes
  • 1 red bell pepper, diced
  • 1/2 small red onion, diced
  • 3 cloves minced garlic
  • 1 cup chopped baby spinach

Dairy

  • 8 ounces feta cheese
  • 4 large eggs

Oils and Spices

  • 4 tablespoons olive oil
  • 1 teaspoon dried oregano
  • 1 teaspoon sea salt
  • 1/2 teaspoon dried thyme
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon red pepper flakes

Optional Toppings

  • Chopped fresh basil or fresh chives

Instructions

  1. Preheat Oven: Preheat your oven to 400 degrees Fahrenheit to prepare for baking the dish.
  2. Prepare Individual Dishes or One Large Dish: If using ramekins or individual serving dishes, divide the tomatoes, bell pepper, red onion, garlic, and feta cheese evenly among 4 oven-safe dishes and drizzle each with a tablespoon of olive oil. For one large dish, combine the tomatoes, bell pepper, red onion, and garlic in the dish, place the feta cheese in the center, and drizzle olive oil over everything.
  3. Mix Spices: In a small bowl, combine the dried oregano, sea salt, dried thyme, black pepper, and red pepper flakes, stirring well to blend the spices.
  4. Season Dish: Sprinkle the mixed spices evenly over the feta and vegetable mixture in each dish or over the combined ingredients in the large dish.
  5. Bake the Base: Place ramekins on a baking sheet or put the large baking dish directly in the oven, and bake for 25 minutes until the vegetables are roasted, and feta starts to soften.
  6. Mix in Spinach: Remove the dishes from the oven and stir to combine the roasted vegetables and feta cheese evenly; then add the chopped baby spinach and stir until well incorporated.
  7. Add Eggs: Create a well in the center of each individual dish or four wells if using one large baking dish, then crack an egg into each well carefully.
  8. Bake with Eggs: Return the dishes to the oven and bake for an additional 10 minutes, until the egg whites are set but yolks remain slightly runny.
  9. Add Fresh Herbs: Remove from the oven and top with optional chopped fresh basil or fresh chives to add a fresh, herbal note to the dish.
  10. Serve: Serve hot with crusty baguette, toast, or pita on the side for dipping into the rich, baked mixture.

Notes

  • You can use either individual ramekins or one large baking dish depending on your serving preference.
  • Adjust the red pepper flakes to taste if you prefer less heat.
  • Serve immediately for the best texture, especially to enjoy the creamy baked eggs.
  • Feta cheese gives the dish a salty, tangy flavor—if substituting, choose a similarly strong-flavored cheese.
  • To make this dish vegetarian, ensure the cheese used is free of animal rennet.
