Ingredients

Scale

Salmon Meatballs

  • 1 lb fresh salmon, skin removed and finely chopped
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 tablespoons fresh parsley, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon lemon juice
  • Salt and pepper to taste

Creamy Avocado Sauce

  • 1 ripe avocado, peeled and pitted
  • 1/4 cup Greek yogurt
  • 1 tablespoon lime juice
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Water to thin, if needed

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for easy cleanup and to prevent sticking.
  2. Mix Meatball Ingredients: In a large bowl, combine the finely chopped salmon, breadcrumbs, Parmesan cheese, egg, parsley, minced garlic, lemon juice, and salt and pepper. Stir well until the mixture is evenly combined.
  3. Form Meatballs: Using your hands, shape the salmon mixture into small, evenly sized meatballs and place them onto the prepared baking sheet, leaving space between each one.
  4. Bake the Meatballs: Bake the salmon meatballs in the preheated oven for 15-18 minutes, or until they are cooked through and slightly golden on the outside.
  5. Prepare Avocado Sauce: While the meatballs are baking, place the avocado, Greek yogurt, lime juice, minced garlic, salt, and pepper in a blender or food processor. Blend until smooth, adding water as needed to thin the sauce to your preferred consistency.
  6. Serve: Once the meatballs are done baking, serve them hot alongside the creamy avocado sauce for dipping, making a delicious and healthy meal.

Notes

  • Use fresh salmon for the best flavor; frozen salmon can be used but should be fully thawed and drained.
  • If you want a gluten-free option, substitute the breadcrumbs with gluten-free breadcrumbs or crushed gluten-free crackers.
  • Adjust the consistency of the avocado sauce by adding water gradually to avoid making it too thin.
  • These meatballs can also be cooked in an air fryer at 375°F for about 12-15 minutes if preferred.
  • Leftover meatballs can be stored in the refrigerator for up to 3 days and reheated gently in the oven or microwave.
