Ingredients

Scale

Protein & Eggs

  • 1 chicken breast, diced
  • 2 eggs, beaten

Vegetables

  • 1/2 cup diced carrots
  • 1/3 cup green peas
  • 2 cloves garlic, minced
  • 2 green onions, sliced (for garnish)

Grains

  • 1 1/2 cups cooked rice (preferably day-old)

Sauces & Condiments

  • 2 to 3 tablespoons soy sauce
  • 1/4 cup mayonnaise
  • 2 tablespoons sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 1 teaspoon rice vinegar

Oils & Seasonings

  • 1 tablespoon oil (plus more as needed for sautéing)
  • Salt and pepper to taste

Instructions

  1. Make Bang Bang Sauce: In a small bowl, mix together mayonnaise, sweet chili sauce, Sriracha, and rice vinegar until smooth. Set aside for later use.
  2. Cook Chicken: Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add diced chicken breast, season with salt and pepper, and cook for 5 to 6 minutes until browned and cooked through. Remove chicken from pan and set aside.
  3. Scramble Eggs: In the same pan, pour in the beaten eggs and scramble gently until just set. Remove eggs from the pan and set aside with the chicken.
  4. Sauté Vegetables: Add a little more oil to the pan if needed, then sauté diced carrots and minced garlic for 2 to 3 minutes until softened and fragrant. Add green peas and cook for an additional minute, stirring frequently.
  5. Fry Rice: Add the cold cooked rice to the vegetable mixture in the pan. Stir-fry on high heat for 3 to 4 minutes, breaking up any clumps and allowing the rice to crisp slightly.
  6. Combine Ingredients: Return the cooked chicken and scrambled eggs to the pan. Stir well to combine all ingredients evenly. Drizzle soy sauce over the rice mixture and mix thoroughly to distribute flavor.
  7. Add Bang Bang Sauce: Pour the prepared bang bang sauce over the rice mixture. Toss everything together until the rice, chicken, and vegetables are well coated and heated through.
  8. Garnish and Serve: Remove from heat and garnish with sliced green onions. Serve the Bang Bang Fried Rice hot for best flavor and texture.

Notes

  • Use day-old cooked rice to achieve the best texture and prevent clumping.
  • Adjust the Sriracha in the bang bang sauce to suit your preferred spice level.
  • Substitute chicken with tofu or shrimp for a different protein option.
  • For extra crunch, add chopped peanuts or cashews as a garnish.
  • If you prefer less oil, use a non-stick pan and spray oil sparingly during sautéing.
