  • 3 large carrots, sliced
  • 3 medium potatoes, peeled and diced
  • 2 celery stalks, sliced

  • 2 tablespoons vegetable oil
  • 4 cups beef broth
  • 2 tablespoons tomato paste

Instructions

  1. Brown the Beef: Heat the vegetable oil in a large pot over medium-high heat. Add the beef cubes and brown them evenly on all sides. This step locks in the flavor. Once browned, remove the beef and set aside.
  2. Sauté the Aromatics: In the same pot, add the chopped onion and cook until softened, about 4 minutes. Stir in the minced garlic and cook for an additional 1 minute until fragrant.
  3. Combine Beef and Tomato Paste: Return the browned beef to the pot with the onions and garlic. Add the tomato paste and stir thoroughly to coat the meat and vegetables, enhancing the stew’s depth of flavor.
  4. Add Broth and Vegetables: Pour in the beef broth, then add the sliced carrots, diced potatoes, celery, dried thyme, bay leaf, salt, and black pepper. Stir well and bring the mixture to a boil.
  5. Simmer the Stew: Reduce the heat to low, cover the pot, and let the stew simmer gently for about 2 hours. This slow cooking will tenderize the beef and allow the flavors to meld beautifully.
  6. Final Touches: Remove the bay leaf from the stew. Taste and adjust the seasoning with additional salt and pepper if needed. Serve your delicious beef stew hot, preferably with crusty bread or over mashed potatoes.
