Ingredients

Scale

Pretzel Crust

  • 2 ½ cups coarsely crushed pretzels
  • ⅔ cup brown sugar
  • 2 tablespoons all-purpose flour
  • 2 teaspoons vanilla extract
  • ¾ cup butter, melted

Blackberry Topping

  • 3 cups fresh blackberries
  • ¼ cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 tablespoon cornstarch

Cream Cheese Mixture

  • 8 ounces cream cheese, room temperature
  • 8 ounces extra creamy cool whip
  • 1 cup powdered sugar

Instructions

  1. Preheat Oven: Preheat your oven to 375°F and lightly spray a 9×13 inch baking dish with non-stick cooking spray to prepare for your crust.
  2. Prepare Pretzels: Crush the pretzels coarsely using a food processor or a large plastic bag and rolling pin until you get small pieces but not powder.
  3. Mix Crust Ingredients: In a large bowl, combine the crushed pretzels, brown sugar, flour, and vanilla extract. Stir these dry ingredients well to mix evenly.
  4. Add Butter: Pour the melted butter into the pretzel mixture and stir thoroughly until the mixture is evenly coated and sticky.
  5. Form Crust: Spread the pretzel mixture into the prepared baking dish, pressing it down into an even layer. Reserve ½ cup of the pretzel mixture for topping later.
  6. Bake Crust: Bake the crust in the preheated oven for 10 minutes. Once baked, remove and let it cool completely to set.
  7. Cook Blackberry Topping: In a medium saucepan, combine the fresh blackberries, granulated sugar, lemon juice, and cornstarch. Heat over medium heat while stirring until the mixture thickens and the berries have softened. Remove from heat and allow to cool.
  8. Prepare Cream Cheese Mixture: Using an electric mixer, beat the room-temperature cream cheese in a medium bowl for 2-3 minutes until it becomes light and fluffy. Add powdered sugar and beat until combined. Finally, gently fold in the cool whip until smoothly mixed.
  9. Assemble Dessert: Once the pretzel crust has fully cooled, spread the cream cheese mixture evenly over the crust layer. Carefully spoon the cooled blackberry topping over the cream cheese layer.
  10. Add Topping and Chill: Sprinkle the reserved pretzel mixture on top of the blackberry layer. Cover the dish with plastic wrap or aluminum foil and chill in the refrigerator for at least 2 hours before serving to let flavors meld and the dessert set.

Notes

  • Make sure the pretzel crust cools completely before adding the cream cheese layer to prevent melting.
  • For extra crunch, bake the reserved pretzel topping separately for a few minutes before sprinkling.
  • This dessert can be made a day ahead and refrigerated for best flavors.
  • Use fresh blackberries for optimal taste and texture; frozen can be used but may alter the filling consistency.
  • Adjust sugar quantities in the fruit topping to suit your sweetness preference.
