Ingredients

Scale

Brownies

  • 1 recipe of the best brownies ever

Buckeye Topping

  • 1/2 cup creamy peanut butter, room temperature
  • 4 tablespoons unsalted butter, room temperature
  • 1 cup powdered sugar
  • pinch of salt
  • 1 teaspoon vanilla extract

Ganache

  • 1 1/2 cups semisweet chocolate chips
  • 3 tablespoons heavy cream

Instructions

  1. Prepare Brownies: Prepare the brownies according to your chosen recipe, ensuring the pan is fully lined with parchment paper on all sides for easy removal. Once baked, allow the brownies to cool completely to room temperature.
  2. Make Buckeye Topping: In a mixing bowl, combine the softened unsalted butter and creamy peanut butter. Beat the mixture for about 1 minute until smooth and well combined. Add the powdered sugar, a pinch of salt, and vanilla extract. Stir thoroughly until no lumps of powdered sugar remain. Evenly spread this peanut butter mixture over the cooled brownies using a spatula, creating an even layer. Set aside while you prepare the ganache.
  3. Prepare Ganache: Place the semisweet chocolate chips and heavy cream into a microwave-safe bowl. Heat in 30-second intervals, stirring well after each interval, until the chocolate is fully melted and smooth. Pour the chocolate ganache over the peanut butter layer and use a spatula to spread it into an even top layer.
  4. Chill and Serve: Place the layered brownies in the refrigerator and chill until the ganache is fully set, at least 1 hour. Once set, slice into squares and serve. Store any leftovers in an airtight container for up to one week.

Notes

  • Ensure the brownies are completely cooled before adding the peanut butter layer to prevent melting.
  • Use room temperature ingredients for smoother mixing and better texture.
  • For a richer ganache, you can use dark chocolate chips instead of semisweet.
  • These brownies can be stored in an airtight container in the refrigerator for up to one week.
  • Line the pan with parchment paper with overhang on all sides to easily lift brownies out.
