Ingredients

Scale

Meatloaf Layer

  • 1 lb ground beef (85/15 preferred)
  • ½ cup plain breadcrumbs
  • ⅓ cup milk
  • 1 egg
  • ¼ cup ketchup
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

Mashed Potato Layer

  • 3 cups mashed potatoes (prepared or leftover)
  • ¼ cup sour cream
  • 2 tablespoons butter
  • Salt & pepper, to taste

Topping

  • 1 ½ cups shredded cheddar cheese
  • Fresh parsley (optional, for garnish)

Instructions

  1. Preheat and prepare dish: Preheat your oven to 375°F (190°C). Grease a 9×9-inch baking dish or line it with parchment paper to prevent sticking.
  2. Mix the meatloaf: In a large bowl, gently combine ground beef, breadcrumbs, milk, egg, ketchup, garlic powder, onion powder, salt, and black pepper until just mixed to keep the meatloaf tender.
  3. Form and bake meatloaf layer: Press the meat mixture evenly into the bottom of the prepared baking dish. Bake uncovered for 20 to 25 minutes until partially cooked through.
  4. Prepare mashed potatoes: Warm the mashed potatoes in a microwave or on the stovetop. Stir in sour cream and butter, then season with salt and pepper to taste for a creamy consistency.
  5. Layer mashed potatoes over meatloaf: Carefully spread the prepared mashed potatoes evenly over the baked meatloaf layer in the baking dish.
  6. Add cheese and finish baking: Sprinkle the shredded cheddar cheese evenly over the mashed potato layer. Return the dish to the oven and bake an additional 10 to 15 minutes until the cheese is melted and bubbly.
  7. Rest, garnish, and serve: Let the dish cool for 5 to 10 minutes to set. Garnish with fresh chopped parsley if desired. Slice into portions and enjoy your layered meatloaf and mashed potato bake.

Notes

  • Use leftover mashed potatoes or prepare fresh for best results.
  • Ground beef with 15% fat ensures juicy meatloaf.
  • You can substitute sour cream with Greek yogurt for a tangier flavor.
  • The baking dish size (9×9 inches) is important for proper layering and cooking times.
  • Letting the dish rest before serving helps it hold its shape when sliced.
