Ingredients

Scale

Chicken

  • 2 boneless skinless chicken breasts
  • Salt and pepper to taste
  • 1 tablespoon olive oil

Sandwich

  • 1 avocado, sliced
  • 4 slices cheese (Swiss, cheddar, or provolone)
  • 4 slices bread (sourdough, ciabatta, or your choice)
  • 2 tablespoons mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 small red onion, thinly sliced
  • 1 tomato, sliced
  • Butter or olive oil for grilling the sandwiches

Instructions

  1. Prepare the Chicken: Season the chicken breasts with salt and pepper on both sides. Heat the olive oil in a skillet over medium-high heat. Cook the chicken breasts for about 6-7 minutes on each side, or until fully cooked and no longer pink in the center. Remove from the skillet and let rest for a few minutes before slicing thinly.
  2. Prepare the Avocado and Cheese: Slice the avocado and prepare the cheese slices. Set aside for assembly.
  3. Prepare the Bread: Spread a thin layer of mayonnaise and Dijon mustard on each slice of bread to add flavor and moisture to the sandwich.
  4. Assemble the Sandwiches: On two slices of bread, layer the sliced chicken, avocado, and cheese. Add a few slices of red onion and tomato on top. Place the remaining bread slices on top, mayo side down, to complete each sandwich.
  5. Grill the Sandwiches: Heat a skillet or grill pan over medium heat and add butter or olive oil. Place the sandwiches in the skillet and cook for about 3-4 minutes per side until the bread is golden brown and the cheese is melted. Press down gently with a spatula to help the cheese melt evenly.
  6. Serve: Remove the sandwiches from the skillet and allow them to cool for a minute. Slice them in half and serve warm for the best taste and texture.

Notes

  • For extra flavor, you can add fresh herbs such as basil or cilantro inside the sandwich.
  • Use ripe avocado to ensure creaminess and good texture.
  • You can substitute mayonnaise with Greek yogurt for a lighter option.
  • Try different cheese types according to your preference—Swiss, cheddar, or provolone work excellently.
  • Serve with a side salad or chips for a complete meal.
