  • 1 1/2 lb Springer mountain farms chicken breast
  • 1 1/2 tsp paprika
  • 1 1/2 tsp oregano
  • 1 tsp garlic powder
  • 1/2 tsp thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt

Pasta

  • 12 oz gluten free farfalle pasta

Sauce

  • 4 tbsp butter
  • 2 tsp dry shallots
  • 2 tsp Italian seasoning
  • 1/2 cup chicken broth
  • 2 tbsp Gluten Free 1:1 Flour
  • 3 cups heavy cream
  • 12 oz shredded parmesan cheese
  • 1/4 cup pasta water
  • 1/2 tsp salt
  • 1 tsp garlic powder

Instructions

  1. Boil Pasta: In a large pot, boil the gluten free farfalle pasta according to the package instructions until al dente. Drain and set aside.
  2. Mix Chicken Seasonings: In a small bowl, combine paprika, oregano, garlic powder, thyme, salt, and black pepper. Mix well.
  3. Prepare Chicken: Pound the chicken breasts slightly to thin them out evenly. Season both sides generously with the mixed seasoning.
  4. Sear Chicken: Heat olive oil in a large skillet over medium heat. Once hot, place the chicken breasts in the pan and sear for 5 minutes on each side until golden brown.
  5. Cook Chicken Through: After searing, reduce heat to medium-low, cover the skillet with a lid, and cook the chicken for an additional 10-12 minutes until the internal temperature reaches 165°F (74°C).
  6. Rest and Slice Chicken: Remove the chicken from the pan and transfer to a cutting board to rest. Later slice the chicken into strips.
  7. Make Sauce – Melt Butter & Sauté Shallots: In the same pan, add butter and melt over medium heat. Add dry shallots, garlic powder, and Italian seasoning. Stir well and simmer for one minute to release flavors.
  8. Add Flour & Liquids: Sprinkle in the gluten-free flour and stir continuously, scraping the bottom of the pan to prevent lumps. Gradually pour in the chicken broth and heavy cream while whisking to create a smooth, creamy sauce.
  9. Incorporate Parmesan: Add shredded Parmesan cheese and stir constantly until fully melted and the sauce thickens to your preferred consistency.
  10. Toss Pasta with Sauce: Add the cooked pasta into the sauce and toss well to coat all pasta evenly. If needed, add the reserved pasta water one tablespoon at a time to thin out the sauce.
  11. Combine Chicken and Pasta: Add the sliced chicken back into the pan with the pasta. Gently stir to evenly distribute chicken throughout the dish.
  12. Serve: Serve the chicken garlic Parmesan pasta warm and enjoy this creamy, comforting gluten-free meal.
