Instructions

  1. Prepare the fries: If using fresh potatoes, peel and slice 1-2 potatoes into thin, even slices, then cut each slice into skinny fries. Soak them in cold ice water for a few minutes to remove excess starch. After soaking, pat dry with a kitchen towel and toss with a teaspoon of cooking oil, salt, and paprika.
  2. Cook the fries: Preheat the air fryer to 200°C (about 400°F). Spread the fries in a single layer in the air fryer basket and cook for 20-25 minutes until crispy and golden.
  3. Mix the chicken mince: In a large mixing bowl, combine 500g chicken mince with 1 teaspoon thyme, 1 teaspoon cumin, 1 teaspoon marjoram, juice of half a lemon, 1 teaspoon garlic salt, and salt and pepper to taste. Mix thoroughly until spices are evenly distributed.
  4. Add fresh coriander: Stir in ¼ cup chopped fresh coriander into the chicken mixture and combine well.
  5. Assemble the tacos: Lay out 8 mini tortillas and spoon about 1 tablespoon of the chicken mixture onto each. Press down firmly to evenly spread the mixture across the surface.
  6. Cook the chicken on tortillas: Heat a large pan over medium-high heat and add 1 teaspoon cooking oil. Place one or two tortillas chicken-side down depending on pan size. Cook about 3 minutes until the chicken turns golden and slightly crispy. Lower heat to medium-low and cook for an additional 2 minutes.
  7. Flip and finish cooking: Flip tortillas over and cook another minute to ensure chicken is fully cooked through. Add more oil if needed for subsequent tortillas.
  8. Add toppings: Remove tortillas from pan and spread a generous layer of ½ cup tzatziki on each. Add a few crispy fries or potato slices, then top with chopped cucumber, cherry tomatoes, and diced red onion.
  9. Garnish and serve: Drizzle with more tzatziki and sprinkle fresh coriander leaves on top before serving.
