Ingredients

Scale

Strawberries

  • 24+ medium fresh firm strawberries (1 ½2 lbs, depending on size)

Chocolate Cheesecake Filling

  • 8 oz block cream cheese, room temperature
  • ½ cup powdered sugar
  • 2 Tbsp cocoa powder
  • 1 tsp vanilla extract

Garnish

  • Mini chocolate chips (optional, for topping)

Instructions

  1. Prepare Strawberries: Rinse the strawberries under cold water, then drain and dry thoroughly using a salad spinner, towel, or a combination of both to remove all excess moisture.
  2. Remove Stems: Cut the stems off the strawberries so they can stand upright on their cut side without tipping over.
  3. Create Opening: Using a sharp knife, carefully cut a deep “X” into the tip of each strawberry, making sure not to slice all the way through to create a pocket for the filling.
  4. Make Filling: In a mixing bowl, beat together the cream cheese, powdered sugar, cocoa powder, and vanilla extract using a hand mixer until the mixture becomes smooth, light, and fluffy.
  5. Fill Strawberries: Gently open each strawberry at the cut and pipe the chocolate cheesecake filling inside using a pastry bag fitted with a star tip (Wilton 2D or 1M). If you don’t have a piping bag or tip, you can use a zip-top bag by cutting off one corner and squeezing the filling in.
  6. Garnish and Chill: Sprinkle mini chocolate chips over the filled strawberries as desired. For best flavor and texture, chill the stuffed strawberries in the refrigerator for at least one hour before serving.

Notes

  • Ensure strawberries are completely dry before filling to prevent sogginess.
  • You can substitute the cocoa powder with melted chocolate for a richer taste but reduce powdered sugar slightly to maintain sweetness balance.
  • If cream cheese is too cold, the filling will be lumpy; allow it to soften at room temperature before mixing.
  • Chilling the strawberries helps set the filling and intensifies the flavors.
  • These are best consumed within 24 hours to enjoy the fresh strawberry texture.
