Blondie Batter
- 1 cup butter, melted
- 1 1/2 cups brown sugar
- 2 large eggs
- 2 tsp vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp salt
Cinnamon Swirl
- 1/2 cup brown sugar
- 1 tbsp cinnamon
- 1/4 cup butter, melted
Cream Cheese Icing
- 4 oz cream cheese, softened
- 1 cup powdered sugar
- 1–2 tbsp milk
- 1/2 tsp vanilla extract
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C). Grease or line a 9×13-inch baking dish with parchment paper to prevent sticking and ensure easy removal.
- Make Blondie Batter: In a large bowl, mix the melted butter and 1 1/2 cups brown sugar until combined. Stir in the eggs and 2 teaspoons vanilla extract until the mixture is smooth. Gently fold in the all-purpose flour and salt, being careful not to overmix to keep the blondies tender.
- Prepare Cinnamon Swirl: In a separate bowl, combine 1/2 cup brown sugar, cinnamon, and melted butter. Mix until the texture resembles wet sand, which helps create the signature cinnamon swirl.
- Assemble the Blondies: Spread the blondie batter evenly into the prepared baking dish. Drop spoonfuls of the cinnamon mixture on top of the batter, then use a butter knife to gently swirl the cinnamon swirl into the blondie batter for a marbled effect.
- Bake: Place the pan in the preheated oven and bake for 25 to 30 minutes, or until the edges turn golden brown and a toothpick inserted near the center comes out mostly clean. Remove from oven and let cool completely before icing.
- Make the Cream Cheese Icing: Beat the softened cream cheese until smooth in a bowl. Add powdered sugar, milk (start with 1 tablespoon and add more if needed for desired consistency), and vanilla extract. Mix until creamy and smooth.
- Apply Icing: Drizzle or spread the cream cheese icing over the cooled blondies evenly. Allow the icing to set slightly before slicing and serving.
Notes
- Use room temperature eggs for best mixing results.
- To avoid overmixing, fold the flour gently into the wet ingredients.
- Adjust the amount of milk in the icing to achieve your preferred consistency.
- Store blondies in an airtight container at room temperature for up to 3 days or refrigerate for up to a week.
- For extra cinnamon flavor, sprinkle a little cinnamon sugar on top before baking.
