Ingredients

Scale

Pancake Batter

  • 1 cup Flour (Can use gluten-free flour blend)
  • 2 teaspoons Baking Powder (Ensure freshness for best rise)
  • 1/4 teaspoon Salt (Sea salt can be used for flavor)
  • 1 cup Milk (Any non-dairy milk works well)
  • 1 large Egg (A flax egg can substitute for vegan)
  • 2 tablespoons Vegetable Oil (Melted butter can be used for flavor)

Cinnamon Filling

  • 2 tablespoons Melted Butter
  • 1/4 cup Brown Sugar (Light or dark brown sugar can be used)
  • 1 tablespoon Ground Cinnamon (Mix with nutmeg for extra warmth)

Cream Cheese Glaze

  • 4 ounces Cream Cheese (Mascarpone can be a delightful alternative)
  • 1 cup Powdered Sugar (Adjust for preferred sweetness)
  • 2 tablespoons Melted Butter
  • 1 teaspoon Vanilla Extract (Using pure vanilla enhances flavor)

Instructions

  1. Prepare Cinnamon Filling: In a bowl, mix melted butter, brown sugar, and ground cinnamon until well combined. Transfer this mixture to a ziplock bag and let it thicken for 10-15 minutes while preparing the batter to enhance the filling’s consistency.
  2. Make Pancake Batter: In a separate bowl, whisk together the flour, baking powder, and salt. Add in the milk, vegetable oil, and beaten egg, stirring just until combined to keep the batter light and fluffy.
  3. Make Cream Cheese Glaze: In a microwave-safe bowl, heat the cream cheese and melted butter until warm. Whisk until smooth, then blend in the powdered sugar and vanilla extract until the glaze is creamy and smooth.
  4. Cook Pancakes: Preheat a skillet over low heat. Pour ½ cup of batter onto the skillet to form a pancake. Use the ziplock bag to pipe the cinnamon filling into a spiral swirl on top of the batter. Cook until bubbles form on the surface, then carefully flip and cook until golden brown on both sides.
  5. Serve: Stack the cooked pancakes, then generously drizzle or spoon the cream cheese glaze over the top. Optionally, sprinkle with extra powdered sugar or chopped nuts for added texture and sweetness.

Notes

  • For a vegan version, substitute the egg with a flax egg and use non-dairy cream cheese.
  • Use low heat to avoid burning the cinnamon sugar filling during cooking.
  • Allow cinnamon filling to thicken to prevent it from leaking excessively during cooking.
  • Glaze can be adjusted for sweetness by varying powdered sugar quantities.
  • Serve immediately for best texture and flavor.
