Instructions

  1. Prepare the Shrimp: Clean and devein the shrimp, pat them dry to prepare for cooking.
  2. Cook the Shrimp: In a large skillet over medium heat, cook the shrimp for 2-3 minutes on each side until they turn pink and are fully cooked. Remove from heat and set aside.
  3. Make the Casserole Mixture: In a large mixing bowl, combine sour cream, mayonnaise, lemon juice, garlic powder, onion powder, paprika, salt, and pepper. Stir until well incorporated.
  4. Add the Rice and Cheese: Fold in the cooked white rice and shredded cheddar cheese to the sauce mixture, stirring until evenly coated and smooth.
  5. Assemble the Casserole: Gently stir the cooked shrimp into the rice and cheese mixture ensuring shrimp are evenly distributed.
  6. Transfer to Baking Dish: Grease a 9×13-inch baking dish and spread the shrimp and rice mixture evenly in the dish.
  7. Prepare the Topping: Combine melted butter and breadcrumbs in a small bowl. Sprinkle this mixture evenly over the top of the casserole.
  8. Bake: Preheat oven to 350°F (175°C). Bake the casserole for 25-30 minutes, until the topping is golden brown and the casserole is bubbling.
  9. Garnish and Serve: Remove the casserole from the oven and let it cool for a few minutes. Garnish with chopped fresh parsley. Slice and serve hot, paired with your choice of sides like green salad or steamed vegetables.

Notes

  • You can substitute white rice with brown rice for a healthier option, but cooking time might change slightly.
  • To add extra flavor, consider adding a handful of chopped onions or bell peppers to the shrimp while cooking.
  • For a crispier topping, broil the casserole for 2-3 minutes after baking but watch closely to avoid burning.
  • This casserole can be prepared a day ahead and refrigerated; just add an extra 5-10 minutes to bake time if baking from cold.
