  • 1 pint vegetable oil
  • 2 cups jalapeno peppers, sliced (56 large jalapeños)
  • Kosher salt (optional, for seasoning after frying)

Instructions

  1. Prepare jalapeños. Cut off the stems of the jalapeños and slice each in half lengthwise. Remove the seeds if you prefer less heat, then slice each half into spears or thin sticks. Repeat until all jalapenos are sliced.
  2. Mix together batter ingredients. In a large bowl, combine the all-purpose flour, kosher salt, black pepper, chili powder, and garlic powder. Beat in the eggs and slowly add the beer, mixing until the batter is slightly thinner than a pancake batter. Adjust consistency by adding more flour if needed.
  3. Heat deep fryer. In a deep fryer or large heavy skillet, heat the vegetable oil to 365°F (185°C). Maintain this temperature throughout the frying process for best results.
  4. Dip jalapeños in batter. Fully coat each jalapeño spear in the prepared batter, making sure all sides are covered evenly.
  5. Deep fry jalapeños. Carefully place the battered jalapeño spears into the hot oil. Fry them until they turn golden brown and crispy, and float to the surface, which indicates they are fully cooked. This should take around 2-3 minutes per batch.
  6. Drain, salt, and serve. Remove the fried jalapeños with a slotted spoon and place them on paper towels to drain excess oil. If desired, sprinkle with kosher salt immediately while still hot. Serve warm as a crunchy, spicy snack or appetizer.
