Chicken Ingredients

  • 68 chicken thighs, skinless and bone-in
  • 1 tbsp Italian seasoning
  • 1/2 tsp crushed red chili pepper flakes
  • Salt and black pepper, to taste
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cups spinach, chopped

Instructions

  1. Prepare the Sauce: Place a saucepan over medium-high heat and add the olive oil and minced garlic. Sauté the garlic for about 1 minute until fragrant but not browned.
  2. Simmer Cream Sauce: Add the heavy cream and chicken broth to the pan. Stir to combine, then reduce the heat to low and simmer the sauce for about 10 minutes, stirring occasionally, until it thickens slightly.
  3. Add Parmesan Cheese: Lower the heat further and whisk in the grated parmesan cheese until fully melted and incorporated into the sauce, creating a creamy mixture.
  4. Season the Chicken: While the sauce simmers, place the skinless, bone-in chicken thighs into the crockpot. Season them evenly with Italian seasoning, crushed red chili pepper flakes, salt, and black pepper.
  5. Add Sun-Dried Tomatoes: Sprinkle the chopped sun-dried tomatoes on top of the seasoned chicken in the crockpot.
  6. Add Sauce to Crockpot: Pour the prepared creamy parmesan sauce over the chicken and sun-dried tomatoes, making sure the chicken is well covered.
  7. Cook the Chicken: Cover the crockpot and cook on high for 3 to 4 hours or on low for 6 to 8 hours until the chicken is tender and cooked through.
