Ingredients

Scale

Chicken Mixture

  • 23 cups shredded cooked chicken (rotisserie or baked)
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream or mayonnaise
  • 1/4 cup chicken broth

Stuffing Topping

  • 1 box (6 oz) stuffing mix (traditional or cornbread)
  • 2 tablespoons melted butter
  • Salt and pepper to taste

Instructions

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish to prevent sticking.
  2. Mix the Creamy Base: In a large bowl, combine shredded cooked chicken, cream of chicken soup, sour cream (or mayonnaise), and chicken broth. Stir well until the mixture is smooth and evenly blended.
  3. Layer the Casserole: Spread the creamy chicken mixture evenly into the prepared baking dish.
  4. Prepare the Stuffing: Prepare the stuffing mix according to package directions, but use slightly less water than recommended to keep the stuffing from becoming soggy.
  5. Add Stuffing: Spoon the prepared stuffing evenly over the chicken mixture layer, then drizzle the melted butter over the top to ensure a golden brown crust as it bakes.
  6. Bake Uncovered: Place the casserole in the preheated oven and bake uncovered for 35–40 minutes, or until the stuffing is golden brown and the edges are bubbling.
  7. Cool and Serve: Remove the casserole from the oven and let it rest for 10 minutes before serving to allow the flavors to meld and the texture to set.

Notes

  • Using rotisserie chicken saves time and adds extra flavor.
  • For a creamier texture, sour cream is preferred, but mayonnaise works well too.
  • Adjust salt and pepper according to taste; the soup and stuffing mix may already have salt.
  • To make the stuffing topping crispier, you can broil for 2-3 minutes at the end of baking—watch closely to prevent burning.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven or microwave.
