Beef and Broccoli
- 1 pound London broil steak, sliced thinly into small strips
- 1 pound broccoli, cut into 6 cups of florets
- 2 tablespoons olive oil (or vegetable oil)
- 2 tablespoons sesame oil
- 1/2 cup hot water
- 2 teaspoons sesame seeds (optional garnish)
Sauce
- 6 tablespoons low sodium soy sauce (or gluten free Tamari or coconut aminos)
- 2 tablespoons packed light brown sugar
- 1 1/2 tablespoons corn starch
- 4 cloves garlic, minced
- 2 teaspoons ginger paste (or fresh ginger, grated)
- 1/2 teaspoon black pepper
- Cook Rice (optional): If serving with rice, start cooking it first according to the package directions to have it ready alongside the stir fry.
- Prepare Beef: Slice the London broil steak thinly into small strips for quick and even cooking.
- Make Sauce: In a small bowl, combine soy sauce, brown sugar, corn starch, minced garlic, ginger paste, black pepper, and hot water. Mix well until smooth, then set aside.
- Cook Broccoli: Heat 1 tablespoon sesame oil in a large skillet over medium heat. Add broccoli florets with 2 tablespoons of water, cover, and cook for about 5 minutes until broccoli turns bright green and slightly tender. Remove broccoli and set aside in a bowl.
- Cook Beef: Add the remaining 1 tablespoon of sesame oil to the skillet and increase heat to medium-high or high. Place beef strips in a single layer and cook quickly for about 2 minutes on each side until browned but still tender.
- Simmer with Sauce: Pour the prepared sauce over the cooked beef, reduce heat to low, and simmer for 4-5 minutes until the sauce thickens and coats the meat.
- Combine and Finish: Add the cooked broccoli back to the skillet, tossing everything together to evenly coat with the sauce and heat through.
- Serve: Garnish with sesame seeds if desired and serve the beef and broccoli stir fry hot over steamed white rice.
Notes
- For a gluten-free option, use Tamari or coconut aminos instead of soy sauce.
- Adjust brown sugar to taste if you prefer a sweeter or less sweet sauce.
- Use fresh ginger for more robust ginger flavor instead of ginger paste if available.
- This recipe cooks quickly; prepare all ingredients before starting for smooth cooking.
- Adding a splash of water while cooking broccoli helps steam it to the perfect tenderness.
- Leftovers can be stored in the refrigerator for up to 3 days and reheated on the stovetop or microwave.
