Ingredients

Scale

Chicken Mixture

  • 3 cups cooked chicken, shredded or chopped
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 cup chopped celery
  • 1/2 cup chopped onion
  • 1 tsp dried parsley (optional)
  • 1/2 tsp garlic powder
  • Salt and pepper to taste

Stuffing Base

  • 1 box (6 oz) dry herb stuffing mix
  • 2 tbsp butter, melted

Garnish

  • Fresh parsley for garnish (optional)

Instructions

  1. Prepare Your Baking Dish and Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish to prevent sticking and ease cleanup.
  2. Mix the Creamy Chicken Filling: In a large bowl, combine the cream of chicken soup, sour cream, chicken broth, garlic powder, salt, and pepper. Stir until smooth. Add the cooked chicken, celery, onion, and dried parsley if using. Mix well so all ingredients are evenly incorporated.
  3. Layer the Stuffing and Chicken Mixture: Spread the dry herb stuffing mix evenly on the bottom of the prepared baking dish to create a crunchy base. Pour the chicken mixture over the stuffing, spreading it evenly over the top.
  4. Add Butter and Bake: Drizzle the melted butter over the top of the casserole to help the stuffing crisp and brown. Place the uncovered dish in the oven and bake for 30-35 minutes, until the casserole is bubbly and the stuffing topping is golden brown.
  5. Cool and Serve: Remove from the oven and let the casserole cool for a few minutes to set. Garnish with fresh parsley if desired, then serve warm and enjoy your comforting meal.

Notes

  • Using cooked leftover chicken or rotisserie chicken saves time.
  • For extra flavor, sauté the celery and onion before mixing.
  • Ensure the stuffing mix is evenly spread for a consistent crunchy layer.
  • You can substitute cream of chicken soup with cream of mushroom for a different flavor.
  • Leftovers can be refrigerated and reheated for up to 3 days.
