Strawberry Puree
- 12½ ounces fresh strawberries (about 3/4 pound), cleaned and sliced
- ½ cup granulated sugar
Mousse
- 1 cup cold heavy cream (or whipping cream with at least 30% fat)
Topping
- Extra fresh strawberries, sliced
- Prepare the strawberry puree: Clean and slice the strawberries. In a blender or food processor, combine the sliced strawberries and granulated sugar, then puree until smooth. Remove ½ cup of this puree and set it aside for layering later.
- Whip the cream: In a cold bowl, beat the cold heavy cream until stiff peaks form. This will give the mousse its light and airy texture.
- Combine puree and whipped cream: Gently fold the remaining strawberry puree (not the ½ cup reserved) into the whipped cream. Be careful not to deflate the mixture to maintain the mousse’s fluffiness.
- Assemble the mousse: Divide the reserved ½ cup of strawberry puree evenly between four small to medium-sized glasses (approximately 1 cup size). Spoon the strawberry mousse mixture on top of the puree layer.
- Chill and serve: Refrigerate the assembled mousse for at least 1 hour, or overnight for best flavor and texture. Before serving, top with fresh sliced strawberries for garnish. Enjoy your fresh strawberry mousse!
Notes
- Use cold cream to help achieve better whipped cream consistency.
- For best results, chill the bowl and beaters before whipping the cream.
- Gluten-free and vegetarian friendly dessert.
- The glasses used in this recipe hold about 1 cup each, which helps portion size.
- Mousse can be prepared a day ahead and refrigerated overnight to deepen flavors.
