Creamy Tuscan Chicken Meatballs are a flavorful and comforting dinner option featuring tender chicken meatballs simmered in a rich, creamy sauce infused with sun-dried tomatoes, garlic, and Italian herbs. This dish is perfect for family meals and easy to prepare in under an hour.

Ingredients

Scale

For the Meatballs

  • 1 pound ground chicken
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

For the Sauce

  • 1 tablespoon olive oil
  • 1/2 cup sun-dried tomatoes, chopped
  • 2 cloves garlic, minced
  • 1 cup chicken broth
  • 1 cup heavy cream
  • 1/4 cup grated Parmesan cheese
  • 1 teaspoon dried basil
  • Salt and pepper to taste

Instructions

  1. Prepare the Meatball Mixture: In a large bowl, combine the ground chicken, breadcrumbs, 1/4 cup grated Parmesan cheese, egg, 2 cloves minced garlic, dried oregano, salt, and pepper. Mix thoroughly until all ingredients are well incorporated.
  2. Form the Meatballs: Shape the mixture into meatballs of your desired size, making sure they are uniform for even cooking.
  3. Cook the Meatballs: Heat a skillet over medium heat and cook the meatballs until browned on all sides and cooked through, about 8-10 minutes. Remove the meatballs from the skillet and set aside.
  4. Make the Creamy Tuscan Sauce: In the same skillet, add olive oil and sauté the sun-dried tomatoes and remaining 2 cloves of minced garlic over medium heat until fragrant, about 1-2 minutes.
  5. Simmer the Sauce: Stir in the chicken broth, heavy cream, 1/4 cup Parmesan cheese, dried basil, salt, and pepper. Bring the mixture to a gentle simmer.
  6. Combine Meatballs and Sauce: Return the cooked meatballs to the skillet and simmer together for another 5-10 minutes, allowing the sauce to thicken and flavors to meld.
  7. Serve: Once the sauce has thickened slightly and the meatballs are heated through, serve immediately with your choice of pasta, rice, or crusty bread.

Notes

  • Use fresh garlic instead of garlic powder for deeper flavor.
  • For a lower-carb version, substitute breadcrumbs with almond flour.
  • Sun-dried tomatoes packed in oil will add more richness; drain slightly if preferred.
  • Adjust cream amount to make the sauce thicker or thinner.
  • Ensure meatballs are cooked through to an internal temperature of 165°F (74°C).
  • Can be stored in an airtight container in the refrigerator for up to 3 days.
  • Reheat gently on stovetop to prevent cream from curdling.
