Instructions

  1. Prepare garlic butter for dough: Melt ⅓ cup unsalted butter in a small saucepan over medium-low heat. Add 1 tablespoon minced garlic and cook, stirring frequently, until fragrant (about 30-60 seconds) without browning. Pour into a heat-proof dish and set aside to cool.
  2. Activate the yeast: Heat combined ¾ cup whole milk and ⅓ cup water to 115°F (46°C). Pour into a large mixing bowl, add 2 ½ teaspoons active dry yeast and 1 teaspoon granulated sugar, stir gently and let sit until foamy, about 5-10 minutes.
  3. Mix dough ingredients: Once yeast is foamy, add remaining ¼ cup sugar, 2 large eggs, 1 ½ teaspoons salt, ½ teaspoon garlic powder, and about 2 cups flour. Stir to combine.
  4. Incorporate garlic butter: While mixing, gradually drizzle in the cooled garlic butter mixture and stir until well combined.
  5. Add remaining flour: Slowly add remaining 2-3 cups flour until dough clings to itself and pulls from bowl sides while mixing.
  6. Knead the dough: Knead with stand mixer dough hook for 5-8 minutes until smooth and elastic, or knead by hand on a lightly floured surface for about 10 minutes adding flour as needed if sticky.
  7. First rise: Lightly grease a large bowl with oil, place dough inside turning to coat all sides. Cover with plastic wrap and let rise in a warm place until doubled in size, about 1-2 hours.
  8. Preheat oven and prepare baking dish: When dough has doubled, preheat oven to 375°F (190°C). Place 3 tablespoons butter in a 13×9 inch glass or ceramic dish and melt it in the oven. Swirl dish to coat bottom and set aside.
  9. Shape rolls: Punch down dough gently and transfer to floured surface. Divide into 24 equal portions (~45g each). Shape each into a tight ball and place in prepared baking dish, spacing evenly so rolls are barely touching.
