Ingredients

Scale

Dough Ingredients

  • 4 1/2 tablespoons unsalted butter
  • 2 tablespoons minced garlic
  • 3 1/2 cups + 1 tablespoon all-purpose flour
  • 3 tablespoons chopped fresh parsley
  • 1 tablespoon granulated sugar
  • 2 1/4 teaspoons instant yeast
  • 1 teaspoon fine sea salt
  • 1 cup whole or 2% milk, warmed to 110°F
  • 1 large egg, room temperature
  • 1 beaten egg, for brushing the tops

Garlic Butter Topping

  • 2 tablespoons unsalted butter
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh parsley
  • Flaky sea salt, for finishing

Instructions

  1. Prepare the Baking Pan: Lightly butter the bottom and sides of a 9×13 inch baking pan and set it aside to prevent sticking during baking.
  2. Make Garlic Butter for Dough: In a small pot, melt 4 1/2 tablespoons of unsalted butter with 2 tablespoons minced garlic over low heat. Cook for 1-2 minutes until fragrant, then remove from heat and allow to cool slightly while you prepare the dough.
  3. Mix and Knead the Dough: In a stand mixer bowl, combine 3 1/2 cups plus 1 tablespoon all-purpose flour, 3 tablespoons chopped fresh parsley, 1 tablespoon granulated sugar, 2 1/4 teaspoons instant yeast, and 1 teaspoon fine sea salt. Add the warmed 1 cup milk (110°F), 1 large room temperature egg, and the garlic butter mixture. Using a dough hook, knead on low speed for 10-12 minutes until dough is smooth, soft, and tacky. If too sticky, add flour one tablespoon at a time.
  4. Shape the Rolls: Divide the dough into 12 equal portions (about 67 grams each). Shape each into a smooth ball by pinching the seam tightly on the bottom. Place the rolls into the prepared pan, cover with plastic wrap or a clean towel, and allow them to rise in a warm place for 1-2 hours until doubled in size.
  5. Preheat the Oven: Set your oven to 350°F (180°C) to prepare for baking.
  6. Bake the Rolls: Brush the tops of the risen rolls with the beaten egg wash. Bake for 20-30 minutes, or until the tops are a beautiful golden brown.
  7. Make Garlic Butter Topping: While baking, melt 2 tablespoons unsalted butter in a small pot with 1 tablespoon minced garlic. Cook for 1-2 minutes until fragrant, then remove from heat and stir in 1 tablespoon chopped fresh parsley.
  8. Finish and Serve: Once the rolls come out of the oven, immediately brush them generously with the garlic butter topping. Sprinkle flaky sea salt on top if desired, and serve warm for the best flavor and texture.

Notes

  • For accurate flour measurement, spoon the flour into your measuring cup and level it off with a knife; do not scoop directly from the bag.
  • If the dough feels overly sticky during kneading, add flour gradually one tablespoon at a time to prevent dryness.
  • Using room temperature eggs and warm milk aids proper yeast activation and dough consistency.
  • For a stronger garlic flavor, increase the amount of minced garlic in the garlic butter topping to taste.
  • Flaky sea salt adds a nice texture contrast but can be omitted or reduced for lower sodium.
  • These rolls are best enjoyed the day they are baked but can be stored in an airtight container for up to 2 days.
