Ingredients

Scale

Chicken

  • 20 oz (1 ¼ lbs) boneless, skinless chicken breasts

Seasoning & Coating

  • 2 tbsp all-purpose flour
  • ½ tsp dried oregano
  • ½ tsp dried basil
  • ½ tsp sweet paprika
  • ½ tsp salt
  • Freshly ground pepper to taste

Cooking Fat & Flavorings

  • 1 tbsp olive oil
  • 3 tbsp unsalted butter, divided
  • 3 garlic cloves, minced
  • 2 tbsp parsley, freshly chopped

Instructions

  1. Prepare the chicken: Dry the chicken breasts thoroughly with a paper towel, then cut them into 1-inch pieces to ensure even cooking.
  2. Season the chicken: In a bowl, add the chicken pieces and sprinkle the flour, dried basil, paprika, oregano, salt, and freshly ground pepper over them. Toss well until every piece is evenly coated with the flour and herbs.
  3. Heat the skillet: Place a large cast iron skillet on the stovetop over medium-high heat. Add the olive oil and 1 tablespoon of butter. Allow the oil to heat until hot and the butter to melt completely.
  4. Cook the chicken: Arrange the coated chicken pieces in a single layer in the skillet. Let them cook undisturbed for about 3 minutes to develop a golden crust, then flip each piece and cook for an additional 2 minutes until browned on both sides.
  5. Add flavor: Add the remaining 2 tablespoons of butter, minced garlic, and fresh parsley to the skillet. Stir and cook for one more minute, ensuring the chicken is fully cooked through and infused with the garlic butter sauce.
  6. Serve: Remove from heat and serve immediately while hot. Enjoy the chicken bites alone or paired with sides like rice, pasta, or a fresh salad for a complete meal.

Notes

  • Use a cast iron skillet or heavy-bottomed pan for best searing results.
  • Make sure not to overcrowd the pan to allow even browning of the chicken.
  • For extra flavor, marinate the chicken with seasoning before coating with flour.
  • Adjust garlic quantity to taste if you prefer a milder or stronger garlic flavor.
  • These chicken bites reheat well and can be stored in the fridge for up to 3 days.
