Ingredients

Scale

Pizza Base

  • 1 pre-made pizza crust (store-bought or homemade)

Roasted Garlic

  • 1 medium head of garlic
  • 2 tablespoons olive oil (divided)

Spinach

  • 1 cup fresh spinach, chopped
  • Salt and pepper to taste

Cheese Mixture

  • 1 cup ricotta cheese
  • 1 cup mozzarella cheese, shredded (divided)
  • ½ cup feta cheese, crumbled
  • ¼ cup grated Parmesan cheese

Seasoning and Garnish

  • 1 teaspoon dried oregano
  • 1 teaspoon crushed red pepper flakes (optional)
  • Fresh basil leaves for garnish
  • Salt and pepper to taste

Instructions

  1. Roast the Garlic: Preheat your oven to 400°F (200°C). Slice off the top of the garlic head, drizzle with 1 tablespoon of olive oil, wrap it tightly in aluminum foil, and roast for 30-35 minutes until the cloves are soft and caramelized. Let it cool slightly, then squeeze the roasted garlic cloves out of their skins into a bowl.
  2. Prepare the Spinach: Heat a skillet over medium heat with the remaining 1 tablespoon of olive oil. Add the chopped spinach and sauté for 2-3 minutes until wilted. Season with salt and pepper to taste. Remove from heat and set aside.
  3. Make the White Sauce: Mash the roasted garlic in the bowl with a fork until smooth. Add the ricotta cheese, half of the shredded mozzarella, dried oregano, and a pinch of salt and pepper. Mix everything together until well combined, forming a creamy garlic-ricotta sauce.
  4. Assemble the Pizza: Spread the garlic-ricotta mixture evenly over the pizza crust. Top with the sautéed spinach, then sprinkle the remaining mozzarella cheese and crumbled feta evenly over the top. If desired, add crushed red pepper flakes for a spicy kick.
  5. Bake the Pizza: Place the assembled pizza on a baking sheet or pizza stone and bake in the preheated oven at 400°F (200°C) for 15-20 minutes. Bake until the crust is golden-brown and the cheeses are bubbly and slightly browned.
  6. Finishing Touches: Remove the pizza from the oven and let it cool for 2-3 minutes. Garnish with fresh basil leaves for a fragrant and colorful finish. Slice and serve warm.

Notes

  • Use a pre-made pizza crust for convenience or homemade crust for a fresher base.
  • Roasting the garlic mellows its flavor and adds a sweet, caramelized note.
  • Sautéing spinach reduces moisture and prevents soggy crust.
  • Adjust red pepper flakes to your preferred spice level or omit for mild flavor.
  • Serve with a side salad for a complete meal.
