Nougat Base

Instructions

  1. Prep: Line an 11×7 inch pan with parchment paper to prepare for setting the nougat.
  2. Melt: Using a double boiler over a medium-low simmer, combine the salted butter and white chocolate chips. Stir continuously with a rubber spatula until the chocolate just begins to melt.
  3. Add marshmallows gradually: Add half a bag of mini marshmallows at a time, stirring continuously over the simmering water. Repeat every minute until all marshmallows are incorporated.
  4. Stir to smooth: Continue stirring vigorously until the marshmallows fully melt and the nougat base is smooth and well combined, approximately 7-10 minutes.
  5. Fold in gumdrops: Remove from heat and quickly fold in half of the halved gumdrops to prevent the nougat from setting prematurely. Add remaining gumdrops and fold until evenly distributed.
  6. Press into pan: Transfer the nougat mixture into the prepared pan. Use the rubber spatula to press it evenly, then cover with another piece of parchment paper and use your hands to compress the nougat, ensuring an even thickness and no air bubbles.
  7. Chill: Refrigerate the nougat for at least 2 hours to allow it to set fully. It can chill for several days if made ahead.
  8. Cut: Lift the nougat from the pan using the parchment paper and place it on a cutting board. Slice into 10 even strips along the short end, then cut each strip into 8 pieces, yielding 80 uniform gumdrop nougat pieces.
