Ingredients

Scale

Chicken

  • 4 cups shredded rotisserie chicken (480g, 16oz)
  • Optional: green onion, red onion, or chopped cucumber

Dressing

  • 1 medium avocado (150g)
  • 1 cup plain non-fat Greek yogurt (228g, or yogurt of choice)
  • 1 cup fresh parsley (60g)
  • ½ cup fresh dill, loosely packed (4g)
  • ½ cup fresh mint (12g)
  • 1 cup baby spinach
  • ⅓ cup lemon juice (80ml, about large lemons)
  • 2 Tbsp extra virgin olive oil (30ml)
  • 2 garlic cloves
  • ½ tsp salt (3g, more to taste)
  • Black pepper (to taste)
  • 12 Tbsp water (optional, to thin it out)

Instructions

  1. Shred the chicken: Shred your rotisserie chicken by pulsing it a few times in a food processor for a finer texture, or use two forks to shred it manually depending on your preference for chunkiness.
  2. Prepare the dressing: In a food processor or high-speed blender, combine the avocado, Greek yogurt, fresh parsley, dill, mint, baby spinach, lemon juice, olive oil, garlic cloves, salt, and black pepper. Blend until smooth, about 2-3 minutes. Add 1 to 2 tablespoons of water if needed to thin out the dressing to a desirable consistency.
  3. Mix chicken and dressing: Place the shredded chicken in a large bowl and pour the prepared green goddess dressing on top. Mix thoroughly to ensure all chicken pieces are evenly coated with the creamy herb dressing.
  4. Optional additions: For added crunch and flavor, stir in chopped green onions, red onions, cucumber, or mashed white beans, if desired.

Notes

  • Use fresh herbs for the best flavor in the dressing.
  • Adjust salt and lemon juice to taste to balance the flavor.
  • This salad can be served chilled or at room temperature.
  • Great for meal prep – keep refrigerated for up to 3 days.
  • Serve on its own, with greens, or as a sandwich filling.
