  • 1 (15-ounce) can white beans, drained and rinsed (cannellini beans, navy beans, black eyed peas, and/or chickpeas all work)
  • ½1 teaspoon pepper flakes of choice (such as urfa pepper or crushed red pepper flakes)

Instructions

  1. Marinate Shallots: Combine the finely chopped shallot, red wine vinegar, and ½ teaspoon kosher salt in a small bowl. Let this mixture sit for 5 minutes to soften the shallots and mellow their sharpness.
  2. Prepare Herb Dressing: Meanwhile, in a medium bowl, combine the finely chopped tender herbs with the extra virgin olive oil. Toss gently to coat the herbs evenly, creating a fragrant and flavorful dressing.
  3. Assemble Salad: Add the drained and rinsed white beans, pepper flakes, and the shallot-vinegar mixture to the bowl with the herb dressing.
