Ingredients

Scale

Meat & Vegetables

  • 1 package (400 grams) smoked sausage (beef, chicken, or pork)
  • 3 cups (450 grams) baby gold potatoes, thinly sliced
  • 2 cups (250 grams) carrots, thinly sliced (3 to 4 large carrots)
  • 1 large yellow onion, thinly sliced

Seasonings & Oils

  • 2 tablespoons olive oil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon dried basil
  • 1 teaspoon dried parsley
  • 1/2 teaspoon garlic powder
  • 1 teaspoon paprika
  • 1/4 teaspoon dried thyme
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground black pepper

Other

  • 4 tablespoons unsalted butter, divided into 1-tablespoon pieces
  • Fresh parsley, chopped (for garnish)
  • Ketchup, for serving
  • Cooking spray (for foil preparation)

Instructions

  1. Prepare Foil and Preheat: Preheat your oven to 200°C (390°F) or set your grill to medium-high heat (220 to 230°C / 425 to 450°F). Tear four sheets of heavy-duty aluminum foil and lightly coat each with cooking spray to prevent sticking.
  2. Slice Ingredients: Slice the smoked sausage into coin-sized pieces. Thinly slice the baby gold potatoes, carrots (halving large carrots as needed), and the large yellow onion for even cooking.
  3. Combine Base Mixture: In a large bowl, toss together the sliced sausage, potatoes, carrots, and onion with olive oil, Italian seasoning, dried basil, dried parsley, garlic powder, paprika, dried thyme, salt, and ground black pepper until everything is evenly coated.
  4. Assemble Packets: Evenly divide the mixture among the four prepared foil sheets. Place one tablespoon of unsalted butter on top of each batch of ingredients. Seal each foil packet tightly, folding edges carefully to ensure no steam escapes, but avoid double wrapping.
  5. Cook Packets: If grilling, place the sealed packets on the grill over medium-high heat and cook for 20–30 minutes, flipping halfway through to cook evenly. For the oven, arrange the packets on a baking sheet and bake for 30–35 minutes, checking tenderness. When cooking over a campfire, nestle packets in hot coals and cook for 20–40 minutes, flipping every 5 minutes to avoid burning.
  6. Serve: Carefully open the foil packets to release hot steam. Garnish with freshly chopped parsley and serve immediately with ketchup if desired for a tasty dipping option.

Notes

  • Use heavy-duty aluminum foil to prevent tearing and leaking during cooking.
  • Adjust seasonings to taste; add red pepper flakes for a spicy kick if preferred.
  • Ensure vegetables are sliced thinly so they cook through evenly within the cooking time.
  • For a vegetarian version, substitute sausage with plant-based sausage or extra vegetables like bell peppers and zucchini.
  • If cooking over a campfire, check packets frequently to avoid burning and to ensure even cooking.
  • Leftovers can be refrigerated for up to 3 days and reheated in foil packets or a skillet.
