Ingredients

Scale

Chocolate Truffle Mixture

  • 8 ounces (227g) good quality chocolate (at least 60% cacao), finely chopped
  • 1 tablespoon unsalted butter
  • ½ cup (120ml) heavy whipping cream
  • ½ teaspoon vanilla extract

Instructions

  1. Chop Chocolate: Finely chop the chocolate bars to ensure smooth melting. Place the chopped chocolate and butter in a heatproof bowl and set aside.
  2. Heat Cream: Heat the heavy cream in a microwave-safe bowl just until it starts to bubble, being careful not to overheat as it can ruin the chocolate.
  3. Mix Ganache: Pour the heated cream over the chocolate and butter mixture. Let it sit for 5 minutes to soften, then add vanilla extract and stir until the mixture is completely melted and smooth. Cover the surface with plastic wrap and refrigerate for 1 hour to firm up.
  4. Scoop Truffles: Use a small cookie scoop or measure 2 teaspoons of the chilled ganache. Scoop all portions first. If the ganache is too soft to roll, place the scooped portions back in the refrigerator to harden slightly.
  5. Shape and Coat: Roll each chilled scoop into a ball and coat with your choice of toppings such as cocoa powder, chopped nuts, or sprinkles. Serve or store chilled.

Notes

  • Use at least 60% cacao chocolate for the best flavor and texture.
  • Be careful not to overheat the cream to avoid seizing the chocolate.
  • Refrigerate the ganache well to make scooping and rolling easier.
  • Experiment with different coatings like cocoa powder, powdered sugar, chopped nuts, or shredded coconut.
  • Store truffles in an airtight container in the refrigerator for up to one week.
