Crust and Filling
- 2 ½ cups almond flour
- ⅓ cup erythritol sweetener
- 2 tablespoons coconut flour
- ¼ teaspoon salt
- ½ cup butter, melted
- ½ teaspoon vanilla extract
- ¾ cup sugar-free raspberry jam
Glaze
- ⅔ cup Swerve Confectioners
- 2 to 3 tablespoons heavy whipping cream
- 2 teaspoons keto sprinkles
- Preheat Oven: Heat your oven to 350ºF (175ºC) and line an 8×8-inch metal baking pan with parchment paper, leaving extra overhang for easy removal.
- Prepare Dough: In a large bowl, whisk together almond flour, erythritol sweetener, coconut flour, and salt. Add melted butter and vanilla extract, mixing until the dough begins to clump together.
- Bake Bottom Crust: Press a little over half of the dough evenly into the prepared baking pan. Bake for 10 minutes, then remove and allow to cool for 10 minutes.
- Add Jam and Top Crust: Spread sugar-free raspberry jam evenly over the cooled crust. Crumble or sprinkle the remaining dough over the jam layer, pressing lightly with your hands to even it out.
- Bake Top Layer: Bake the assembled bars for 20 to 25 minutes more, or until the top is golden brown. Remove from oven and let cool completely, then refrigerate for 1 hour to firm up.
