Glaze

  • ⅔ cup Swerve Confectioners

Instructions

  1. Preheat Oven: Heat your oven to 350ºF (175ºC) and line an 8×8-inch metal baking pan with parchment paper, leaving extra overhang for easy removal.
  2. Prepare Dough: In a large bowl, whisk together almond flour, erythritol sweetener, coconut flour, and salt. Add melted butter and vanilla extract, mixing until the dough begins to clump together.
  3. Bake Bottom Crust: Press a little over half of the dough evenly into the prepared baking pan. Bake for 10 minutes, then remove and allow to cool for 10 minutes.
  4. Add Jam and Top Crust: Spread sugar-free raspberry jam evenly over the cooled crust. Crumble or sprinkle the remaining dough over the jam layer, pressing lightly with your hands to even it out.
  5. Bake Top Layer: Bake the assembled bars for 20 to 25 minutes more, or until the top is golden brown. Remove from oven and let cool completely, then refrigerate for 1 hour to firm up.
  6. Prepare Glaze: In a medium bowl, whisk together Swerve Confectioners and 2 tablespoons of heavy cream. Add more cream or a few drops of water as needed to thin the glaze to a spreadable consistency.
  7. Apply Glaze: Spread the glaze over the chilled bars and sprinkle keto sprinkles on top. Return the bars to the refrigerator for about 30 minutes to set the glaze.
