Ingredients

Scale

Beef and Broth

  • 2 pounds beef chuck, cut into 1-inch pieces
  • 4 cups beef broth
  • 2 cups water

Sauce and Seasonings

  • 1 cup soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons ginger, minced
  • 4 cloves garlic, minced
  • 1 tablespoon sesame oil
  • 1 teaspoon black pepper
  • 1 tablespoon gochujang (Korean chili paste)

Noodles and Garnishes

  • 1 pound fresh or dried noodles (such as udon or ramen)
  • 3 green onions, sliced for garnish
  • Sesame seeds for topping (optional)
  • Fresh cilantro for garnish (optional)

Instructions

  1. Prepare the Beef: Season the beef chunks with black pepper to enhance their flavor before cooking.
  2. Mix the Sauce: In a bowl, combine beef broth, soy sauce, brown sugar, minced ginger, minced garlic, sesame oil, and gochujang. Stir thoroughly until the sugar dissolves and the mixture is well blended.
  3. Place in Slow Cooker: Add the seasoned beef chunks into the slow cooker, then pour the prepared sauce mixture over the beef evenly.
  4. Cook: Cover the slow cooker and set to low heat for 6-8 hours or high heat for 3-4 hours, cooking until the beef becomes tender and flavorful.
  5. Prepare Noodles: About 15-20 minutes before serving, cook the noodles according to the package instructions. Drain the noodles well and set aside to prevent overcooking.
  6. Combine: Once the beef is fully tender, add the cooked noodles directly into the slow cooker. Gently stir to combine the noodles with the beef and broth, allowing the noodles to soak up some of the flavorful liquid.
  7. Serve: Dish out the beef and noodle mixture into bowls. Garnish with sliced green onions, and optionally sprinkle with sesame seeds and fresh cilantro for added flavor and presentation.

Notes

  • If you prefer a spicier dish, increase the amount of gochujang or add a pinch of red pepper flakes.
  • Using beef chuck provides great flavor and tenderness after slow cooking; you can substitute with other cuts suitable for slow cookers.
  • Fresh noodles can be substituted with dried noodles, but adjust cooking times accordingly.
  • For a gluten-free version, use gluten-free soy sauce or tamari and gluten-free noodles.
  • Leftovers store well in the refrigerator and can be reheated gently on the stovetop or in the microwave.
