5 from 147 reviews

Louisiana Voodoo Fries are a deliciously indulgent snack featuring crispy golden fries smothered in a creamy, spicy white cheddar cheese sauce seasoned with ranch and cayenne pepper for a bold flavor kick.

Ingredients

Scale

Fries

  • 26 ounces frozen French fries

Cheese Sauce

  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 2 cups milk
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground white pepper
  • 2 teaspoons ranch seasoning powder
  • 1/2 teaspoon cayenne powder (divided)
  • 8 ounces white cheddar cheese, shredded

Instructions

  1. Preheat oven or air fryer. Preheat your oven or air fryer to 400°F to ensure the fries cook evenly and become crispy.
  2. Cook the fries. Arrange frozen fries in a single layer on a baking sheet or inside the air fryer basket. Bake or air fry according to package instructions, until fries are golden brown and crispy.
  3. Make a roux. In a medium saucepan over medium heat, melt the butter, then whisk in the all-purpose flour until fully combined. Cook this mixture for about 2 minutes to eliminate the raw flour taste.
  4. Prepare the cheese sauce. Gradually add the milk to the roux while whisking continuously to avoid lumps. Stir in salt, ground white pepper, ranch seasoning powder, and half of the cayenne powder.
  5. Thicken and add cheese. Lower the heat to medium-low and cook the mixture for about 5 minutes, stirring frequently, until the sauce thickens. Remove from heat and stir in the shredded white cheddar cheese until melted and creamy.
  6. Serve. Pour the rich cheese sauce evenly over the cooked fries, sprinkle the remaining cayenne powder on top if desired, and serve immediately while warm.

Notes

  • For extra crispiness, pat fries dry before cooking or choose a higher temperature setting if using an air fryer.
  • Adjust cayenne powder quantity to control the spice level according to your preference.
  • Use freshly shredded cheese for better melting texture and flavor.
  • If sauce becomes too thick, temper with a splash of milk to reach desired consistency.
  • Serve with additional ranch dressing or hot sauce on the side for extra flavor options.
