Instructions

  1. Preheat the oven: Set your oven to 350 degrees Fahrenheit and lightly grease an 8-inch or 9-inch square or round baking dish, or a 9 ½-inch cast iron oval baking dish for even cooking.
  2. Prepare the crumble topping: In a mixing bowl, combine gluten-free flour, rolled oats, maple syrup, cinnamon, sea salt, and softened or melted coconut oil. Stir well until all ingredients are thoroughly mixed. Refrigerate the mixture for 5 minutes to help it firm up slightly while preparing the peach filling.
  3. Make the peach filling: In a large bowl, toss the sliced peaches with gluten-free flour, lemon juice, lemon zest, vanilla extract, maple syrup, cinnamon, nutmeg if using, and a pinch of sea salt. Gently combine to coat the peaches evenly without breaking them down.
