Shrimp Scampi
- 1 lb large shrimp (peeled and deveined)
- 4 tbsp unsalted butter, divided
- 2 tbsp olive oil
- 4 garlic cloves, minced
- 1/4 cup dry white wine (or chicken broth)
- 2 tbsp freshly squeezed lemon juice
- 1/4 tsp red pepper flakes (optional)
- 2 tbsp chopped fresh parsley, plus more for garnish
- Salt and pepper to taste
Garlic Bread
- 4 thick slices of French or Italian bread
- Garlic butter (made by mixing softened butter with minced garlic and parsley)
- Prepare the Garlic Bread: Preheat your oven to 375°F (190°C). Spread the prepared garlic butter evenly over each slice of the French or Italian bread and arrange them on a baking sheet.
- Bake the Garlic Bread: Place the baking sheet in the oven and bake for 8-10 minutes or until the bread is golden and toasted. Remove from the oven and set aside.
- Cook the Shrimp: Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn the garlic.
- Sauté Shrimp: Season the peeled and deveined shrimp with salt and pepper, then add them to the skillet in a single layer. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove the cooked shrimp and set aside.
- Make the Sauce: In the same skillet, add the remaining 1 tablespoon of butter and pour in the white wine or chicken broth. Allow it to simmer gently for 1-2 minutes to reduce slightly.
- Finish the Sauce: Stir in the freshly squeezed lemon juice, red pepper flakes if using, and the remaining butter. Mix well until the sauce is smooth and well combined.
- Combine Shrimp with Sauce: Return the cooked shrimp to the skillet and toss them in the sauce to coat evenly. Sprinkle with chopped fresh parsley and stir gently.
- Serve: Divide the shrimp and sauce into serving bowls. Serve immediately with the warm garlic bread on the side for a complete, delicious meal. Enjoy!
