Ingredients

Scale

Shrimp Scampi

  • 1 lb large shrimp (peeled and deveined)
  • 4 tbsp unsalted butter, divided
  • 2 tbsp olive oil
  • 4 garlic cloves, minced
  • 1/4 cup dry white wine (or chicken broth)
  • 2 tbsp freshly squeezed lemon juice
  • 1/4 tsp red pepper flakes (optional)
  • 2 tbsp chopped fresh parsley, plus more for garnish
  • Salt and pepper to taste

Garlic Bread

  • 4 thick slices of French or Italian bread
  • Garlic butter (made by mixing softened butter with minced garlic and parsley)

Instructions

  1. Prepare the Garlic Bread: Preheat your oven to 375°F (190°C). Spread the prepared garlic butter evenly over each slice of the French or Italian bread and arrange them on a baking sheet.
  2. Bake the Garlic Bread: Place the baking sheet in the oven and bake for 8-10 minutes or until the bread is golden and toasted. Remove from the oven and set aside.
  3. Cook the Shrimp: Heat 1 tablespoon of olive oil and 2 tablespoons of butter in a large skillet over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant, taking care not to burn the garlic.
  4. Sauté Shrimp: Season the peeled and deveined shrimp with salt and pepper, then add them to the skillet in a single layer. Cook the shrimp for 2-3 minutes on each side until they turn pink and opaque. Remove the cooked shrimp and set aside.
  5. Make the Sauce: In the same skillet, add the remaining 1 tablespoon of butter and pour in the white wine or chicken broth. Allow it to simmer gently for 1-2 minutes to reduce slightly.
  6. Finish the Sauce: Stir in the freshly squeezed lemon juice, red pepper flakes if using, and the remaining butter. Mix well until the sauce is smooth and well combined.
  7. Combine Shrimp with Sauce: Return the cooked shrimp to the skillet and toss them in the sauce to coat evenly. Sprinkle with chopped fresh parsley and stir gently.
  8. Serve: Divide the shrimp and sauce into serving bowls. Serve immediately with the warm garlic bread on the side for a complete, delicious meal. Enjoy!

  • For gluten-free options, use gluten-free bread or serve with rice or pasta instead of garlic bread.
  • Ensure shrimp are cooked just until pink to avoid toughness.
