Chicken and Vegetables
- 2 pounds boneless, skinless chicken breasts, sliced into thin strips
- 3 large bell peppers, sliced
- 1 large onion or 2 small onions, sliced
Seasonings and Sauce
- 15 ounces diced tomatoes or salsa
- 1/3 cup fajita seasoning blend (see below)
- Salt & pepper to season the chicken
- 3/4 cup low-sodium chicken broth (for Instant Pot only)
Fajita Seasoning Blend
- 2 tablespoons chili powder
- 1 tablespoon cumin
- 1 1/2 teaspoons salt (or more to taste)
- 1 1/2 teaspoons dried oregano
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/2 teaspoon black pepper
- Season the Chicken. Season the sliced chicken breasts with salt and black pepper evenly to enhance the flavor before cooking.
- Combine Ingredients in Slow Cooker. Add the seasoned chicken, sliced bell peppers, sliced onions, diced tomatoes or salsa, fajita seasoning blend, and all other seasonings into the slow cooker. Stir well to combine all ingredients thoroughly.
- Cook in Slow Cooker. Cook on HIGH for 2 to 3 hours or on LOW for 4 to 6 hours until the chicken is tender and the vegetables are cooked through.
- Instant Pot Preparation – Sauté Vegetables. If using an Instant Pot, turn it to the sauté setting. When hot, add oil, sliced onion, and bell peppers. Cook for 3 to 5 minutes until the vegetables soften.
- Season and Combine Ingredients in Instant Pot. Season the chicken with salt and pepper, then add the seasoned chicken, chicken broth, diced tomatoes, and fajita seasoning blend into the pot. Stir well to combine.
- Pressure Cook in Instant Pot. Secure the lid and seal the valve. Set the Instant Pot to high pressure and cook for 8 minutes. Once done, perform a quick pressure release.
- Serve. Once cooking is complete using either method, stir the fajita mixture, adjust seasoning if necessary, and serve hot with tortillas, rice, or your preferred sides.
