Instructions

  1. Prepare Brownie Batter: Preheat the oven to 350°F (175°C) and line a mini muffin pan with paper liners or spray with non-stick spray. In a large bowl, whisk together melted butter and sugar until smooth. Add vanilla extract and eggs, whisking until fully combined. Gently fold in flour, cocoa powder, and salt until just combined to avoid overmixing.
  2. Bake Brownies: Spoon the batter evenly into the prepared mini muffin pan. Bake in the preheated oven for 13-15 minutes, or until a toothpick inserted into the center comes out with moist crumbs but no raw batter. Remove from oven and let cool completely before frosting. Brownies can be stored at room temperature or frozen until ready to frost.
  3. Make Peanut Butter Frosting: Using a stand mixer or handheld mixer, beat peanut butter and butter together until smooth and creamy. Gradually add powdered icing sugar and beat until combined.
