Ingredients

Scale

Main Ingredients

  • 2 tablespoons olive oil
  • 1 small yellow onion or white onion, diced
  • 2 cloves garlic, minced
  • pounds ground beef
  • 1 tablespoon brown sugar
  • 2 tablespoons chili powder
  • 1 teaspoon onion powder
  • ½ teaspoon garlic powder
  • ½ teaspoon ground cumin
  • ¼ teaspoon salt
  • ¼ teaspoon black pepper
  • 1 cup beef broth
  • 1 (15 ounce) can crushed tomatoes
  • 1 (15 ounce) can tomato sauce
  • 1 tablespoon tomato paste
  • 1 (15 ounce) can black beans, drained and rinsed
  • 1 (15 ounce) can red kidney beans, drained and rinsed
  • ¼ teaspoon cayenne pepper (optional for spicy)

Toppings

  • Shredded cheddar cheese
  • Tortilla chips
  • Finely chopped red onions
  • Thinly chopped green onions
  • Sour cream

Instructions

  1. Sauté onions and garlic: Heat a medium Dutch oven or soup pot on medium heat. Add the olive oil and diced onion. Sauté for 3-4 minutes until the onion becomes translucent, stirring occasionally. Then add minced garlic and cook for another minute until fragrant.
  2. Brown the beef: Add the ground beef to the pot. Use a wooden spoon to break the meat into small pieces. Cook for about 5 minutes until the beef is fully browned and no longer pink.
  3. Add spices: Sprinkle brown sugar, chili powder, onion powder, garlic powder, cumin, black pepper, and salt over the browned meat. Stir well and cook for an additional 30 seconds to let the spices bloom.
  4. Add liquids and beans: Pour in the beef broth, crushed tomatoes, tomato sauce, and tomato paste. Add the drained black beans and red kidney beans. Stir everything together thoroughly.
  5. Simmer the chili: Bring the chili to a low simmer. Let it cook uncovered for 20-25 minutes, stirring occasionally to prevent sticking and to allow flavors to meld and thicken the chili.
  6. Serve with toppings: Ladle the chili into bowls and garnish with your choice of shredded cheddar cheese, tortilla chips, finely chopped red onions, green onions, and a dollop of sour cream. Enjoy warm.

Notes

  • For spicier chili, add cayenne pepper to taste.
  • Use fresh garlic and onions for the best flavor.
  • If you prefer a thicker chili, allow it to simmer a little longer.
  • Can be made a day ahead; flavors improve after resting overnight.
  • Serve with cornbread or over rice for a complete meal.
