Ingredients

Scale

Shrimp Seasoning

  • 1 pound large shrimp (peeled, deveined, tails on)
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Cooking Ingredients

  • 3 tablespoons olive oil
  • ½ teaspoon red pepper flakes
  • 8 tablespoons unsalted butter
  • 4 cloves garlic (minced)
  • ¼ cup dry white wine
  • 15 oz can diced tomatoes (drained, no salt added)
  • 2 teaspoons fresh squeezed lemon juice
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  1. Season the Shrimp: Pat the shrimp dry using paper towels to ensure even cooking and proper searing. Toss the shrimp with ½ teaspoon kosher salt and ¼ teaspoon freshly ground black pepper. Set aside to allow the seasoning to penetrate.
  2. Prepare the Sauce Base: Heat 3 tablespoons of olive oil in a large skillet over medium heat. Add ½ teaspoon of red pepper flakes and cook for about 10 seconds to infuse the oil with mild heat. Then add 8 tablespoons of unsalted butter and swirl the skillet until the butter fully melts.
  3. Sauté the Garlic: Add 4 cloves of minced garlic to the melted butter and oil mixture. Cook for about 30 seconds, stirring frequently, until the garlic is fragrant but not browned to avoid bitterness.
  4. Cook the Shrimp: Add the seasoned shrimp to the skillet and cook for approximately 1 minute on each side. This allows the shrimp to develop color and cook evenly through.
  5. Add Wine and Tomatoes: Pour in ¼ cup of dry white wine followed by the drained diced tomatoes. Cook the mixture until the tomatoes are heated through and the shrimp turn fully pink, about 1-2 additional minutes. This step blends the flavors and creates the signature scampi sauce.
  6. Finish and Serve: Remove the skillet from heat and stir in 2 teaspoons fresh squeezed lemon juice along with ½ teaspoon kosher salt and ¼ teaspoon freshly ground black pepper to taste. Optionally, garnish with chopped parsley for a fresh pop of color. Serve immediately with toasted bread, crackers, or cooked pasta to enjoy the full flavors.

Notes

  • Ensure shrimp are peeled and deveined for best texture and flavor.
  • Do not overcook the shrimp to keep them tender and juicy.
  • Use a dry white wine such as Sauvignon Blanc or Pinot Grigio for the best flavor in the sauce.
  • Draining the canned tomatoes removes excess liquid, preventing the sauce from becoming too watery.
  • Garnishing with parsley adds freshness and color but is optional.
  • Serve with your choice of pasta, grilled bread, or crackers for a complete meal.
